This built-in knock box from Bar Professional is recessed into the worktop next to your espresso machine. Only the rim and rubber knock bar protrude above the worktop. It is intended for bars and coffee shops that want to keep their work surface clear.
Working with a built-in model
With a fixed built-in bin, you can knock out the puck without having to grab anything first: hold the portafilter above it, give the bar one tap, and the puck drops down. That saves seconds per cup, which quickly add up when there is a queue. Because the bin is installed beneath the worktop, your work surface stays clear for milk jugs, cups, and the tamper. You do need a cutout in the worktop, so measure the opening before cutting it yourself or having it cut. The inner bin can be lifted out for emptying.
Choosing and keeping it clean
Not sure whether to choose a built-in or freestanding model? Consider your worktop. If it is made of solid wood or stainless steel and you can cut a hole in it, a built-in model is the most discreet solution. If that is not possible, choose a freestanding model from the knock boxes. Empty the bin at least once per shift and rinse it out; coffee grounds left sitting in it will start to smell rancid, and you will taste it in the coffee. Unscrew the rubber bar to access the area underneath. For further cleaning, use the barista tools.
