A half-full bottle of wine that goes back in the cupboard quickly loses its aroma and flavor. This manual vacuum pump from Bar Professional is made of stainless steel and comes with two stoppers. You pump the air out of the bottle and seal it, allowing you to continue serving from an opened bottle for several more days.
How it works behind the bar
Push one of the included stoppers into the bottle neck, place the pump on top, and pump until you feel resistance. That is when the vacuum is properly formed: most of the oxygen that causes the wine to oxidize has been removed. When opening the bottle, simply pull out the stopper and you will hear air flowing back in. If you serve wine by the glass, it is best to combine the pump with a few extra wine stoppers, so every opened bottle has one immediately and you do not have to search for them at the end of the shift.
Choosing and maintaining it
Choose this manual version if you want to keep it behind the bar without having to think about charging or batteries; an electric pump is more convenient if you seal many bottles during each shift. The stainless steel can withstand daily use and moisture, but the pump has internal components: rinse it and dry it afterward instead of putting it in the dishwasher.
