How to smoke with them
Put half a teaspoon of chips in the chamber of your cocktail smoker or on a heatproof dish. Light them with a torch until they glow rather than flame, and trap the smoke under an inverted glass or cloche. Let it infuse for twenty to thirty seconds, stir briefly, and pour. If you smoke it for longer, the drink will become bitter—shorter is always fine. Cherry wood pairs particularly well with vanilla and caramel notes, so let it loose on bourbon, rye, and aged rum.
