Because whisky, bourbon, and rum themselves mature in oak barrels, this smoke blends seamlessly with what is already in the glass: you enhance the profile rather than adding something out of place. How to use them
Add half a teaspoon of chips to the chamber of your cocktail smoker or place them in a heatproof dish. Ignite them with a torch until they glow rather than flame, and capture the smoke under an inverted glass or cloche. Oak is more powerful than apple or cherry, so keep it to fifteen to twenty seconds and taste as you go. If you smoke for too long, the flavor turns bitter and burnt. The chips are untreated and finely shaved, so they catch quickly and smolder evenly.
Storage and ordering
Keep the chips dry and sealed; damp wood smolders poorly and produces musty smoke instead of clean smoke. Do not store them next to strongly scented products, as dry wood easily absorbs aromas.
