This bar spoon from Bar Professional’s Speakeasy Premium Collection is 30 centimetres long, made of stainless steel and finished with a warm copper-coloured coating. The handle is twisted in the classic Japanese style: the spiral is not decoration but a tool. Place the spoon between your thumb and index finger and let it roll through your fingers, creating a smooth stirring motion along the wall of your mixing glass with minimal movement. Exactly what you need to chill and dilute a Negroni or Manhattan without introducing air. The same spiral lets liquid flow gently downward when building a layered cocktail and keeping the layers separate. At the top is a three-pronged trident that serves as a fork for fishing a cherry, olive or piece of peel out of the jar.
Why 30 centimetres
The length determines how comfortably you can work. Thirty centimetres is the size that fits a standard mixing glass and most shakers, allowing you to reach the bottom without your hand hanging into the glass. If you work with taller mixing glasses or large carafes, a longer model is more comfortable.
