Arcoroc Magnifique

Two glasses on the table, and it’s immediately clear which is for what: that’s what Arcoroc’s Magnifique series does. The 35 cl bowl is narrower and keeps white wine cool, while the 47 cl bowl is roomier and gives red wine the air it needs.

Both stand on a long, slender stem that you hold with two fingers. That’s not etiquette for etiquette’s sake, but the way to prevent the warmth of your hand from transferring to the wine. The glasses are supplied in sets of six.

White or red wine, which bowl

Choose by capacity and by what is in the bottle. Into the 35 cl you pour about twelve centilitres of white wine, up to just below the widest point; the rest of the bowl catches the aroma and keeps the wine together so it does not warm up too quickly. The 47 cl takes the same measure of red wine, but with more air around it, because that space is exactly what lets a young red open up.

It is tempting to fill both glasses halfway. Do not do that with the large bowl: a wine glass filled to the halfway mark can no longer be swirled without spilling, and swirling is precisely what that extra capacity is there for.

Pouring and keeping wine at temperature

Serve white wine between eight and twelve degrees and red wine between sixteen and eighteen. Red wine straight from a warm room tastes alcoholic; half an hour in the fridge before serving solves that. Always hold the glass by the stem, including when you clink, because the bowl fogs up immediately from the warmth of your fingers.

With a young red wine, swirling helps: turn the glass a few times so the wine runs up the side and gains surface area. Then smell it straight away. For sparkling wine this bowl is too wide; a flute is the choice there. So a kir royal or a mimosa does not belong in the Magnifique.

Tempered glass and the stem

Magnifique is made from tempered soda-lime glass. Arcoroc gives the bowl and the rim extra tempering, which makes the glass better able to take the knocks that are unavoidable in a wash-up area. The glasses are dishwasher safe; put them in a compartmented rack rather than loose in a basket. When drying them, never twist the bowl while holding the base, because that movement breaks more stems than the dishwasher ever will.
