Chilling, shaking and garnishing
Chill the glass for five minutes in the freezer, or fill it with ice and water while you shake. The cocktail goes into the glass without ice, so all the cold has to come from the glass and the shaker. Tip the ice water out, shake the glass dry and only then strain into it. A frosted glass keeps the cocktail at temperature noticeably longer than one at room temperature, and with twelve centilitres and no ice that buys you a few extra minutes of drinking pleasure.
Shake a pornstar martini hard and short with vanilla vodka, passion fruit puree, lime juice and sugar syrup, and double strain so no seeds get through. Lay the passion fruit half rounded side down on the foam and set the shot of prosecco beside it, not in it. The same bowl then serves for an espresso martini or a dry martini, the latter being stirred rather than shaken.
