The story
Passoa was launched in France in 1985, during the same wave that also made peach schnapps popular: the eighties were the decade of fruit liqueurs. Its base is passion fruit juice from Brazil, and its distinctive orange-red color made the bottle instantly recognizable behind the bar. In the Netherlands, the liqueur found a second life when the Pornstar Martini became the country's most popular cocktail - because the flavor that takes center stage in it is precisely this one. If you want to leave the shaker aside, simply pour Passoa with orange juice.
The right glass
A highball glass of 33 to 47 cl is the logical choice here. The ratio is mild, so a generous glass with plenty of ice makes the cocktail fresher rather than weaker. Choose clear, colorless glass: the deep orange color of Passoa with orange juice is exactly what you want to see on the table, and the passion fruit pulp slowly drifting downward completes the look. For the prosecco version, choose a tulip-shaped glass or a coupe.

Variations & twists
Passoa with prosecco may well be the simplest party cocktail there is: 4 cl liqueur, top up with bubbles, done. With cranberry juice you get a deep red version, and with pineapple juice a tropical one. Add vodka and lime and you have a Pornstar Martini. Serving tip
The splash of lime juice is included in the recipe for a reason: Passoa is quite sweet, and without acidity the cocktail quickly becomes syrupy. Use half a fresh passion fruit as a garnish - it costs almost nothing and makes the difference between a drink and a cocktail. Serve with a straw so the pulp at the bottom comes along too.
