What is Passoã?

Brazilian passion fruit in a French bottle

Passoã is a passion fruit liqueur. French liqueur maker Rémy Cointreau launched it in 1985, and since 2017 the brand has been mostly owned by Amsterdam-based Lucas Bols. They blend juice from Brazilian passion fruit with alcohol and sugar to make a pink-red liqueur at 17% ABV. You’ll recognize that black bottle with the sunset right away.

Passoã became world-famous thanks to the Pornstar Martini. Douglas Ankrah created that cocktail in London in 2002, with vodka, Passoã, passion fruit purée and vanilla, served with a shot of prosecco on the side. In the Netherlands, we’ve been drinking it as a mixer for much longer, with orange juice, tonic or 7-Up. Today, you can also buy ready-to-drink cans, such as the Passion Fruit Martini and Passoã Orange.

What does Passoã taste like?

Sweet and sour, like a ripe passion fruit

Nose

Passion fruit & tropical fruit

Lots of fresh passion fruit, with a hint of mango and citrus behind it. You can tell right away that it’s tropical.

Palate

Sweet with a tart kick

Sweet at first, followed by that tartness you get from passion fruit. Juicy and fresh, not sticky.

Finish

Fresh and fruity

It finishes fresh and slightly bitter, thanks to the passion fruit seeds. You barely notice the 17% alcohol.

Sweet 3/5
Sour 3/5
Fruity 5/5
Strength 2/5

This is what Passoã tastes like on its own. With juice or tonic, it’s lighter, and in a Pornstar Martini, the vanilla from the vodka comes through.

How to drink it

Three ways to drink Passoã

Passoã is best served cold and mixed. The Pornstar Martini is the most popular, but with juice or tonic, you can have a drink in your glass in ten seconds.

Pornstar Martini

Shake 50 ml vanilla vodka, 25 ml Passoã, 25 ml passion fruit purée, and 15 ml lime juice, then strain into a coupe. Garnish with half a passion fruit and serve a shot of prosecco alongside.

Passoã and juice

Pour 50 ml Passoã and 150 ml orange juice into a highball glass full of ice. This is the Dutch classic. Sweet and fresh, with an orange-pink color.

Glass: highball glass →

Passoã tonic

Add 50 ml Passoã, 150 ml tonic water, and a lime wedge to a large wine glass filled with ice. Passoã tonic is drier and fresher than the juice version, because the bitterness of the tonic goes well with the passion fruit.

Recipe

Making Passoã and juice, step by step

Everyone knows Passoã with orange juice. Here’s how to make it refreshing and not too sweet.

What you need

5 cl Passoã
15 cl cold orange juice
A long drink glass full of ice cubes
Half a passion fruit or a slice of orange

How to make it

1. Put the bottle of Passoã and the juice in the fridge for at least an hour.
2. Fill a long drink glass completely with ice.
3. Pour the Passoã over the ice and add the orange juice.
4. Stir two or three times from the bottom up.
5. Place the half passion fruit on top of the ice, or put the orange slice on the rim.

Tip

A splash of fresh lime juice takes away some of the sweetness. If you love passion fruit, try the Passion fruit Caipirinha and Don's Special Daiquiri too. Browse our long drink glasses.

What percentage alcohol is in Passoa?
The bottle contains 17% alcohol. The cans, such as Passoã Orange and Passion Fruit Martini, are much lower, at around 5 to 7%. If you mix it yourself with juice or tonic, it also comes to about 5%.
What is Passoa made of?
Juice from Brazilian passion fruits, also known as maracujá, with alcohol and sugar. The brand is French. Rémy Cointreau launched it in 1985, and it is now largely owned by Lucas Bols. When Passoã first came onto the market, it was 20%. In Europe, it is now 17%.
What goes into a Pornstar Martini?
Vanilla vodka, Passoã, passion fruit purée, lime juice, and a little vanilla syrup. Shake, strain into a coupe, and garnish with half a passion fruit. Serve a shot of prosecco on the side. Douglas Ankrah created it in London in 2002.
What can you mix Passoã with?
Orange juice is the classic choice. Tonic, 7-Up, prosecco, and soda work too. Add a splash of vodka for a stronger drink. You can use it in cocktails like the Hurricane and Sex on the Beach in place of peach liqueur.
Does Passoã need to be refrigerated?
Once opened, yes. Passoã is made largely from fruit juice and stays fresh longer in the refrigerator. Screw the cap on tightly, and an opened bottle will keep for about six months. Unopened, you can simply store it somewhere cool and dark.
What is the difference between Passoã and Safari?
They are both tropical fruit liqueurs. Passoã (17%) is pure passion fruit, pink-red, and sweet and sour. Safari (20%) is orange and tastes like a blend of exotic fruits. For a Pornstar Martini, always use Passoã.
