Remove the alcohol from a cocktail, and all that’s left is sweet juice. That doesn’t make a mocktail. A good alcohol-free cocktail needs to be rebuilt with acidity, a little bitterness and some texture in place of the alcohol. Below is one mocktail recipe with a set ratio that you can adapt in all kinds of ways. Below that, you’ll find the classics, from the Virgin Mojito to the Shirley Temple, as well as all our other alcohol-free recipes.

One mocktail recipe that
works with any mocktail

How many people?
Ingredients
1 person
2,5 clvers limoen- of citroensap
1,5 clsuikersiroop
6 clvruchtensap of koude thee
8 cltonic of bruisend water
3 druppelsbitters of een snuf zout
Making mocktails: step by step
1

Shake the sour, the sweet and the juice with plenty of ice for 12 seconds. You need to shake even without alcohol, because that’s what gives it its texture.

2

Strain into a highball glass filled with fresh ice.

3

Top up with chilled tonic or sparkling water and stir gently once.

4

Add the bitters or a pinch of salt and garnish generously. Give it a taste. Too sweet? Add another splash of something sour.

Why mocktails often disappoint

Alcohol does more in a cocktail than you might think. It carries the aromas, gives a slight burning sensation that balances the sweetness, and makes you drink slowly. Remove it without replacing it with anything, and you’re left with lemonade. That’s why so many people find mocktails too sweet. We balance that with more acidity than you’re used to. Add something bitter, such as tonic, cold tea, grapefruit, or a few drops of bitters. And texture, by shaking or adding something creamy. That way, you can serve a drink that holds its own alongside the rest.

The right glass

With a mocktail, the glass may matter even more than with a regular cocktail. It has little to do with whether it looks good or bad. If you’re not drinking, you don’t want to be sitting among cocktails with a cola glass. When you get the same glass as everyone else, you’re part of the group instead of watching from the sidelines. So just use your highball glasses, from 33 to 47 cl, and garnish them just as generously as you would the alcoholic versions. If you’re making something like a short drink, use a coupe or martini glass. Exactly as you would if it contained alcohol.

Frequently asked questions

What’s the difference between a mocktail and a cocktail?

Just the alcohol. Otherwise, you make them the same way, and they look the same too. A good mocktail is shaken, strained, and garnished just like a cocktail.

What glass do you use for a mocktail?

Use the same glass as for the cocktail it resembles. Check out our highball glasses for most mocktails and our cocktail glasses for short drinks.

Why does my mocktail taste too sweet?

Usually, it doesn’t have enough acidity. Add fresh lemon or lime juice and no extra syrup. A pinch of salt or a few drops of bitters also cut the sweetness.

Can you make every cocktail alcohol-free?

Almost any cocktail. Cocktails based on sour and fruity flavors, such as mojitos, daiquiris, and spritzes, work perfectly without alcohol. If the spirit itself is the star, as in a Negroni or Old Fashioned, it’s trickier, even with 0.0 alternatives.
