Half a litre or 28 centilitres

Half a litre is the party size: for lager, wheat beer and anything you pour with a generous head. Bear in mind that a full stein weighs around a kilo, so for a long evening many people prefer the 28 cl. How to pour into a stein

Rinse the stein with cold water before you pour, so the foam clings less to the wall and the beer runs in more smoothly. Hold the glass at an angle of about forty-five degrees and bring it upright once the stein is half full, so the head builds in one go. Serve lager at five to seven degrees and wheat beer a little warmer. Let the stein stand for twenty seconds after pouring before you hand it over.

Grease, foam and rinsing clean

Grease is the enemy of a good head: a fingerprint or a trace of washing-up liquid breaks the foam down within a minute. Wash beer glasses separately from greasy tableware and rinse them thoroughly. A glass brush removes residue from the bottom corner where a sponge cannot reach. Let the steins drain upside down on a rack rather than on a cloth, otherwise the glass takes on the smell.
