With a champagne glass, look at the ratio between height and width. 28 cl in a flute means you pour about twelve centilitres and leave the rest as room for aroma and foam. With the red wine glass, 60 cl is the size in which full-bodied wines such as syrah or barolo open up; for lighter reds a smaller bowl is often more pleasant. Hold both glasses by the stem. With champagne that keeps the wine cold; with red wine it lets you swirl without smudging the bowl. Pour sparkling wine in two goes, with the glass slightly tilted. For a bellini the peach purée goes in first and the prosecco follows gently; a mimosa is made the same way with orange juice. Pour red wine up to the widest point of the bowl. Never fill a wine glass more than a third.

Thin-walled glasses with a long stem almost always break at the same point: where the stem meets the bowl. So wash them by hand if you can, and never twist the bowl while holding the foot. If there is no other option, place them separately in the dishwasher with stem clips. Store them upright rather than on the rim.
