How to pour
a dark rum in
Freeze a 4 cm ice cube in an ice cube mold; the larger the cube, the more slowly it melts and the less the rum gets diluted.
Place the tumbler in the freezer for a few minutes, then add the ice cube.
Pour 5 cl of dark rum over the ice and wait half a minute so the drink cools without adding much water.
Squeeze a strip of orange peel over the glass, rub it along the rim, and leave it in the glass. If you find the alcohol harsh, add a few drops of cold water.

The story
Rum comes out of the still colorless. Everything that happens afterward determines its color: time in an oak cask, and in many cases a splash of caramel added at the end. The cask works slowly, imparting vanilla, coconut, caramel, and clove, and in a warm climate this happens faster than in a cool country. Caramel works differently: it deepens the color all at once, without any aging involved. Because its use is permitted in many rum-producing countries without disclosure, a dark bottle alone says nothing about the age of the rum inside.
The right glass
Brown rum is best enjoyed from a glass you can hold in your hand. For rum on the rocks, that means a sturdy tumbler with a flat base, wide enough for a four-centimeter ice cube. If you want to smell what the cask has done, a tulip-shaped nosing glass works better: the bowl gives the aromas room, while the inward-curving rim concentrates the vapors. The right tools

Variations & twists
Brown rum carries a cocktail instead of disappearing into it. In a dark 'n stormy, it goes with ginger beer and lime; in a mai tai, with almond syrup and orange liqueur; and in a rum punch, with citrus and sugar. Serving tip
Serve at room temperature, between 15 and 20 degrees, and place a glass of water beside it. Use one large ice cube instead of a handful of small ones so the rum stays flavorful longer. A strip of orange peel enhances the barrel character without adding sugar.
Good to know
Color from the barrel or from caramel
A dark rum may get its color from years in oak, but it may also come from caramel added at the end. In many rum-producing countries, this is allowed without being stated on the label. Color is therefore not an indication of age or quality.
What oak does to rum
The barrel imparts vanilla, coconut, caramel, and clove while also softening the harshness. In a warm climate, this happens faster than in a cool country, and more also evaporates. As a result, a five-year-old rum from the tropics can taste fuller than you might expect for that number of years.
Añejo, gold, dark en navy strength
These words appear on many labels, but they have no fixed definition. Añejo means aged, gold and dark refer to the color, and navy strength indicates a higher proof, usually above 54 percent. What exactly lies behind them varies by country and by producer.
The solera method
Some producers use a solera: casks arranged in layers, with liquid drawn from the bottom layer, which is continually topped up from the layer above. What goes into the bottle is then a blend of young and old rum. If there's a number on such a bottle, it usually refers to the oldest component, not everything in the bottle.
Why dark rum works neat
The cask took the edge off and replaced it with vanilla and caramel. As a result, dark rum has enough body to stand on its own, neat, over ice, or at room temperature, with at most a few drops of water.
Read the label, not the color
If you want to know what you're holding, look at the aging period, country of origin, and whether anything is said about additives. A light color doesn't mean it's young, and a deep color doesn't mean it's old.
