Havana Club 7 Años

Seven years in Cuban oak
Havana Club 7 Años is dark rum made from Cuban sugarcane and aged for at least seven years in white oak barrels. The warm climate means aging in Cuba is much faster than in, for example, the Scottish Highlands, so seven years here already produces a complex, deep rum.
That makes it the turning point in the range. The 3 Años and Especial are for cocktails; the 7 Años was the first Cuban rum presented as a sipping rum. It's 40% ABV, slightly higher than its younger siblings, and has a distinctive character with tobacco, cocoa, vanilla and dried fruit.

You don't have to mix away the 7 Años. Take your time: first neat, then with a drop of water, and only then with ice.

Pour 3 cl at room temperature into a tulip-shaped tasting glass. Let it stand for a few minutes, smell it first, then take small sips. A few drops of water bring out the tobacco and fruit.

Pour 4 cl over one large, clear ice cube in a heavy tumbler, with a piece of orange peel. The cube melts slowly and keeps the rum cool without watering it down.

Stir 60 ml Havana Club 7 Años, 5 ml sugar syrup, and two dashes of bitters with ice, then strain over a large ice cube and garnish with orange peel. The rum version of the classic.
