A twenty-centiliter port glass sounds spacious, but it isn’t: you pour no more than a third full. The rest of the bowl is there to collect the aromas of a fortified wine.
Why port needs a large bowl
Port, Madeira and oloroso sherry contain more alcohol than regular wine, and that alcohol carries the aromas upward. Pour such a wine into a small glass and you’ll mainly get harshness in your nose. In a larger bowl with a small amount of wine at the bottom, the alcohol can evaporate, leaving notes of nuts, dried fruit and caramel. The same principle applies to Sauternes and other dessert wines.
