Don Papa Masskara
The most festive bottle from Don Papa. Rum from column stills, flavored with calamansi, a small Filipino citrus fruit, honey and a hint of Siling Labuyo, the Filipino chili pepper. Fruity, sweet and just a little spicy: made for refreshing cocktails and ginger beer.

A festival in a bottle
Masskara is inspired by the Masskara Festival in the Philippines, a colorful celebration full of masks. Its base is Don Papa rum made from molasses and distilled in column stills, flavored with three Filipino ingredients: calamansi, a small, tart Filipino citrus fruit; Filipino honey; and Siling Labuyo, a small, hot chili pepper.
That makes Masskara a very different drink from the 7 Years or Baroko. While those center on vanilla and oak, here the fruit takes center stage. The honey and vanilla add sweetness, the calamansi freshness, and the chili a warm tingle on the finish. You can drink it neat, but it’s really at its best over ice, with lime and something fizzy.
In brief
Honey, citrus and a warm tingle
Citrus and honey
Fresh calamansi citrus, with sweet honey and vanilla underneath.
Fruity and sweet
Juicy and fruity, with honey and vanilla. The rum itself is smooth and stays in the background.
Mildly spicy
The chili pepper makes a brief appearance in the finish: a gentle warmth, no burn. Then the honey lingers.
Don Papa Masskara's flavor profile over ice. In a cocktail with lime, the chili stands out more.
How to drink Masskara
Masskara calls for ice, lime, and bubbles. Its fruitiness and mild spice make it a summer rum.
Masskara Mule
50 ml Don Papa Masskara, 15 ml lime juice, and 120 ml ginger beer in a copper mug full of ice. The ginger and chili complement each other.
Go to the Dark 'n Stormy →With ginger ale
50 ml Masskara with 150 ml ginger ale in a long drink glass full of ice, with a wedge of lime. Milder than with ginger beer, and the calamansi comes through better.
Long drink glasses →Masskara Daiquiri
50 ml Masskara, 25 ml lime juice, and 10 ml sugar syrup, shaken hard with ice and strained into a chilled coupe. Less syrup than usual, since the honey is already in it.
