Paix Dieu
Paix Dieu is a Belgian 10% tripel brewed only during the full moon. The beer is cloudy and golden in color, with a creamy head and notes of fruit, yeast, coriander, and herbs. Here you can read what Paix Dieu is, how it tastes, and how to pour it.
A full-moon tripel
Paix Dieu is a tripel from Brasserie Caulier, a brewery in Péruwelz in the Belgian province of Hainaut. The beer is named after the Cistercian abbey of Paix-Dieu, and on the 33 cl bottle you see that name as Cistercian Paix Dieu. People search for it as paix dieu or paix dieu beer.
What makes the beer famous is when it is brewed. Paix Dieu is brewed only when there is a full moon, at night. This is a brewery tradition and the story behind the brand. In the glass, you get a cloudy, golden beer with a rich, creamy head. The taste is soft and malty, with fruit, yeast, coriander, and herbs, plus a light bitterness. At 10%, it is one of the stronger tripels, so you drink it slowly.

How to pour Paix Dieu
A strong tripel should not be drunk ice-cold; take your time with it.
In a footed tulip
Hold the glass at an angle and let the beer run down the side. Stand the glass upright when it is two-thirds full and top it up by pouring into the middle, for a head two fingers high.
More about pouring beer →With or without yeast
Paix Dieu is cloudy. If you leave the sediment in the bottle, the beer stays somewhat clearer. If you pour it in too, you taste more yeast and spices.
More about tripel →8 to 12 degrees
Take the bottle out of the fridge half an hour before serving. At that temperature, the fruit and spices open up. Share the large bottle between two or three people.
Beer tasting at home →Paix Dieu at the table
A full-bodied, spicy tripel can stand up to robust flavors and pairs well with cheese.
Aged cheese
With aged Gouda, Comté or Belgian abbey cheese. The sweetness and spices in the beer complement the saltiness of the cheese.
Poultry
With roast chicken, guinea fowl or rabbit. The fruit in the beer pairs well with light meat.
Mussels and fish
With mussels or a creamy fish dish. The coriander in the beer complements the herbs in the sauce.
Fruit and pastry
With an apple pie or tarte tatin. The fruit and caramel complement each other.
The right glass for Paix Dieu
A 38 to 40 cl tulip or footed bowl. The shape, which tapers slightly towards the top, keeps the aroma above the beer, while the stem prevents your hand from warming the beer. These are the glasses we recommend ourselves.
