What is Tia Maria?

A Jamaican family recipe that went around the world

Tia Maria originally comes from Jamaica. The story goes that a family recipe for a coffee liqueur was lost during unrest on the island and only rediscovered years later; the drink is said to have been named after the aunt who had safeguarded the recipe. After the Second World War, the recipe was reintroduced and Tia Maria grew into one of the best-known coffee liqueurs in the world.

The liqueur is made with coffee extract, vanilla, sugar and Jamaican rum and contains 20% alcohol. That is low enough to drink neat over ice and high enough to hold its own in a cocktail. Today, Tia Maria is produced by ILLVA Saronno in Saronno, Italy, the company behind Disaronno, and exported to more than sixty countries.

Roasted coffee with vanilla

Coffee & vanilla

Fresh, roasted coffee with a distinct vanilla note and a hint of rum underneath. It smells almost like a coffee dessert.

Palate

Sweet but not sticky

Sweet and full of espresso flavor, with enough coffee bitterness to keep it balanced. Less syrupy than many coffee liqueurs.

Finish

Coffee bitterness

A medium-length finish with roasted coffee and cacao, and a slight rum-like warmth. This keeps it drinkable even neat.

How to drink it

Three ways to drink Tia Maria

Tia Maria is the coffee liqueur most bartenders reach for because it is less sweet than the competition. Neat, with milk, or shaken with espresso.

As an Espresso Martini

25 ml Tia Maria, 50 ml vodka, and 30 ml fresh espresso, shaken hard with ice and strained into a coupe. Shaking hard is the secret: that's what creates the layer of foam.

On the rocks

5 cl Tia Maria over ice in a tumbler, with a piece of orange peel. Chilling makes it less sweet and brings out the coffee bitterness. The easiest after-dinner drink.

Tia Maria contains 20% alcohol. That is slightly higher than most coffee liqueurs; Kahlúa, for example, is 16%.
What is Tia Maria made from?

Tia Maria or Kahlúa, both 25 ml with 50 ml vodka and 30 ml fresh espresso. Tia Maria makes the cocktail slightly drier. Always use fresh, hot espresso: cold or instant coffee will not produce a foam layer.
Should you chill Tia Maria?
Not necessarily, but it tastes better chilled. A bottle in the fridge is ready to use straight away, and the sweetness is less noticeable. Thanks to the alcohol and sugar, an opened bottle stays good for months.
