Cocktail picks

Pay attention to the length in relation to your glassware. A pick should protrude over the rim on both sides; otherwise, it will sink into the glass as soon as the ice shifts. A short model is sufficient for low glasses, while a tall glass with lots of ice calls for a longer pick, or you can place it across the rim.

The topper is a matter of taste, but it also serves a purpose. A broad topper, such as the pineapple, balances a heavier garnish. A narrow topper nearly disappears, which is useful when the garnish itself should be the focus. Copper suits a warm, classic bar, while stainless steel remains neutral and does not discolor. A set of six is usually enough for home use. Behind a bar, plan on two sets so half can be washed while you keep working. Don't forget what the olives and cherries go into, because those are by the garnish trays.

A dry martini gets one or three olives on a pick, never two, and you place it over the rim or let it sink into the glass. With a negroni it’s all about the orange zest: squeeze the peel over the glass first so the oil lands on the surface, then skewer it. A cherry goes with almost anything made with whisky.

Skewer the thickest part of the garnish, not the edge, otherwise it will tear off as soon as someone lifts the glass. For fruit that browns quickly, such as apple or banana, skewer it only at the last moment. The measuring tool is with the jiggers.

Stainless steel and copper can be cleaned properly, wood cannot. A wooden pick soaks up sugar and juice and starts to smell after a single evening, while these picks go in the dishwasher and come out clean. The stainless steel versions are the easiest of all to look after.

Copper discolours on contact with acid and with skin. So wash copper picks by hand and dry them straight away, and they will keep their shine. Store them upright in a small pot rather than loose in a drawer, because the points are sharp and will damage each other.
