How long do you age a cocktail on oak?
In a five-litre barrel you taste a clear difference after two to four weeks; with ten litres it is more like four to eight. Taste weekly, because ageing too long gives a bitter, woody drink that can no longer be corrected.
Why does a new barrel have to be soaked first?
Dry oak has shrunk and the staves no longer close fully against one another. Filling the barrel with cold water for one to three days makes the wood swell, closes the seams and lets small leaks disappear on their own.
What happens if the barrel stands empty?
The wood dries out, the staves shrink and gaps open up that will not close again. So always fill an empty barrel with water and a little sulphite, or with a neutral spirit, so it stays moist and nothing grows inside.
Can you clean a wooden barrel with soap?
No. Oak is porous and takes on the smell of soap permanently, after which every subsequent filling tastes of it. Rinsing with hot water is enough; for a more thorough job, use a sulphite solution.
Which drink is best suited to barrel ageing?
Anything that already takes wood well: rum, whisky and cocktails based on dark spirits such as negroni, manhattan and old fashioned. Fresh, citrus-heavy drinks are less suitable, because juice does not keep in the barrel.
